  India Sumatra Java Timor Sulawesi/Kalossi Papua New Guinea India- Monsoon Malabar: Prior to the opening of the Suez Canal when sailing ships took up to six months to transport coffee from India. A very interesting character developed in the flavor of coffee from the holds of these shipments. Today these beans are exposed to monsoon winds during the months of May and June. They are raked, bagged, and stacked repetitively for several weeks resulting in a complete color change from green to golden-yellow, which belies their unique flavor. Malabar is very thick and heavy in the cup. It also has a subtle, spicy aroma and an earthy taste that develops musty overtones when monsoons are heavy. It has virtually no acidy characteristic so the flavor is somewhat muted and overshadowed by the full body. Very interesting.

Java: Full-bodied and supremely rich, with a bold, spicy aroma.

New Guinea: A great balance of body and acidity with a sweet and floral aftertaste. Very heavy-bodied.

Sulawesi/Kalosi - Celebes: Characterized by a rich, heavy body and a full, lightly acidic flavor.

Sumatra: Smooth with a syrupy richness and very heavy body. Low acidity and earthy flavor are this coffees claim to its popularity.
